Creamy Tahini Lemon Dressing with Fresh Herbs

Creamy Tahini Lemon Dressing with Fresh Herbs

Partial as I am to thicker salad dressings, I commonly prefer creamy dressings over vinaigrettes. This creamy tahini dressing with lemon juice and sparkling herbs is my ultra-modern preferred, and I've made it numerous times over the past few weeks already.

Tahini itself works as a cohesive and creamy base for the more potent elements of the dressing, and so while the tahini is not the most prominent feature of the dressing, its sesame taste comes through and enhances all of the other flavors. It is a robust dressing that is going properly with bold-flavored greens like spinach and kale as well as broccoli and combined sweet bell peppers. It's thick enough to use as a dip.

If you do not have clean herbs on hand, then use dried herbs as a substitute. I tried this dressing each approaches, and it's fun either way. If the dressing it too thick, upload extra olive oil or lemon juice, relying on how zesty you want the dressing to be.
