This easy and spicy mung bean dish is my second foray into cooking with mustard veggies. I've quite fallen in love with the sparkling peppery flavor of those greens seeing that I recently observed them in a nearby Asian supermarket. Rather as even though fresh chard leaves were infused with a bit hot mustard, they're a delicious snacking green on their personal but add texture and a zesty warmth to cooked bean dishes as properly. And they integrate splendidly with the medley of warm and fragrant Indian seasonings and spices in these creamy mung beans.
Mustard vegetables are quite popular in Asia, so that you should be able to locate them in Asian grocers ? They're well worth the look. If they're no longer available, replacement kale, spinach, chard or collard veggies and upload a pinch of dried mustard powder.
